Caturday Art: Mudpie Cookies!

'Tis the season for baking cookies, so today for my Caturday Art we used PhotoFaceFun to make a Mudpie cookie...don't I look yummy?


I assume that most people know that I was named after the Mud Pie dessert (even though every now and then someone asks Mommy if she liked to play in the mud as a child.) The other day while looking for some new cookie recipes she typed in "Mud Pie Cookies" on a fluke, and was shocked to discover that they are actually a popular "no bake" cookie! She had all the ingredients necessary to make them, which she did right away, and she says they are fantastic, and so easy to make!

With many thanks to Janet is Hungry, here's the recipe:

Mud Pies

2 cups white sugar
1/2 cup milk
1/2 cup shortening
5 tbsp cocoa
1 cup fine coconut
1/2 tsp salt
1 tsp vanilla
3 cups quick cooking oats

1. In a saucepan, stir together the sugar, milk, shortening, cocoa, salt and vanilla. Bring to a boil and remove from heat at once.

2. Add oats and coconut. Stir well.

3. Cool a bit and drop by spoonfuls onto cookie sheets lined with waxed paper. Chill until set.

(The only thing we changed is we left out the coconut (not a fan) and made bar cookies instead of drop cookies...we're lazy that way!)

  5. They look easy enough for TW! Pop doesn’t like coconut either. TW would leave out the salt cos she always does and maybe add something else. We always thought Mud Pies contains coffee.
